Shrimp Ceviche with Zea Mays Corn Chips

Ingredients

200 g (7 oz) Zea Mays artisan corn chips

300 g (10 oz) shrimp, peeled and deveined

Juice of 5 limes

1 tomato, diced
-
¼ red onion, finely chopped

1 chile serrano, finely chopped (optional)

2 tbsp fresh cilantro, chopped

Salt and pepper to taste
Instructions
1. Prepare shrimp:
Chop shrimp into bite-sized pieces. Place in a glass bowl and cover with lime juice. Let marinate 20 minutes until opaque.
2. Mix ceviche:
Add tomato, onion, chile, cilantro, salt, and pepper. Mix well.
3. Serve:
Spoon ceviche over Zea Mays corn chips or serve chips on the side for dipping.
